Can Diabetic People Eat Cornbread Made From Jiffy Mix?

My friend is diabetic but her birthday is coming up, so I want to make her a cake. I don’t have the supplies to bake anything from scratch, but was wondering if cornbread from mix is a bit more diabetes friendly than cake from mix?

    I just don’t think it is appropriate. Any cake will do. But a cornbread cake.Come on. Buy a regular cake mix and frosting. A ice cream cake is even better. Forget about her diabetes. She will take care of that.She will eat what she think is ok for her. Sorry to be so blunt. But a cornbread cake, maybe a bowl of bean soup to go along with it.WOW

    I find it kind of insulting that people immediatly thinks that her friend has type 2 diabetes (You get from being over weight).
    I have type 1, which is childhood diabetes, caused randomly (not from being overweight) when your pancreus shuts down. I can eat anything I want to (I love cadbury’s chocolate with caramel! :]) as long as I take insulin.
    I think your friend will be fine..just ask her! It’s easier to know if you ask which type she has and which she can eat. You don’t want to be all “Oh, I was going to make cake, but you’re diabetic so I made corn bread.” People have treated me like that, and I became depressed…
    just ask her!

    No. Corn meal has a high glycemic index number, which means that it raises blood sugar too high for a diabetic to eat.
